Chicken scallops

Scallops, cockscombs, are an offal from the combs of roosters. Cockscombs do not have any specific taste or smell, they are rich in hyaluronic acid, and eating them helps fight joint pain. In 2013, the European Food Safety Authority gave a positive assessment on the safety of including cockscomb extract in the daily diet, including dairy products. In European cuisines, cockscombs are considered a delicacy; according to ancient beliefs, cockscombs give the eater courage, strength and endurance, as well as pride. In gastronomy they are used mainly boiled.
